I first came across this salt at one of our farmers’ markets at Captiva two years ago. A customer shared a bag of salt with me from the Sea of Cortez near Baja California. He explained some of the very special traits and health benefits of this salt. I started using the salt and found the taste exceptional. It is strange to think of having a salt craving, but this salt can do that as it has great complexity of flavor and substance. It lights up the most simple dishes. What makes it amazing is that it contains around 85 known sea minerals unlike conventional table salt which is mainly sodium chloride. There is no comparison in flavor. This salt is very special!
